Default What's for Dinner this week?

Seriously, I am embarrassed at how my family ate last week with me being so sick (equates to Daddy hitting up the drive thru...). Fall is setting in so I want to bust out the slow cooker, maybe a roast or a whole chicken...simple recipes with simple ingredients and veggies on the side. The kind of veggies LOADED with vitamins that my big kids won't eat but I will so I can keep Christine healthy!

DH went shopping (again - this time he did a little better) and bought stuff to make a turkey dinner. Just the turkey breast, and then boxed other stuff - The kids love it! You could do frozen green beans and baked potatoes for extra vitamins and cranberried have a TON of Vit. C. Or I just did the frozen stir-fry in a bag - Teriyaki - it was actually quite good. Just add frozen chicken cut up in slices. Lots of veggies there and I used the boil in a bag brown rice.

Good question! We just had a hell week of activity, parties, adn the like, so this week I am going easy on the planning....
Tonight-Pasta with zucchini ribbons
Mon-Roasted lemon chicken
TUES-Make our own taco night
Wed-pork fried rice and steamed veggies
Thurs-tabbouli with hummus and pita (kids love to eat with their hands on this night)
Fri-To a friend's house for pizza!

DH's biggest event of the year is next Saturday so this is my last night seeing him for a while. We are doing leftovers tonight and I am on my own with the kids all week, so it will be mostly prepared meals and quesadillas.

If you are looking for something good, and fall-ish, how about meatloaf? I don't remember if I posted about it or not (I intended to), but I recently made individual-sized meatloaves stuffed ith mozzarella cheese. It was super easy - just mix the meatloaf mixture as usual but form them into fist-sized balls. Take half (or two halves) of a string cheese stick and stuff it into the middle of each meatloaf ball. You can even puree vegetables into the meatloaf mixture itself or into the (premade spaghetti) sauce on top and sneak in some of those vitamins. I put them in a baking dish covered with tin foil for 30 minutes without sauce, then added sauce and baked for an additional 15 minutes. When I made this, super picky DH ate two of the individual meatloaves and DS ate about half of an adult portion. It was a huge success.

Ally, I am totally stealing the meatloaf idea. That sounds so yummy!

Okay, this week's menu

Tonite: Pasta with Marinara sauce and roasted veggies
Monday: Tacos with black beans
Tuesday: Ally's meatloaf idea ...just switched that one, mashed potatoes, spinach
Wednesday: Broccoli sesame stir fry with brown rice
Thursday: Grilled Salmon, rice pilaf, kale salad
Friday: Homemade pizza with spinach and feta cheese
Saturday: Minestrone soup and homemade french bread (made the soup two weeks ago and have some in the freezer)

I will also be making some chicken and vegetable fried rice (Alden loves it for lunch and DH likes to take it for his lunch too) and a set of chicken pot pies (individual size) for lunch one day, then freeze the rest.

Hey Erika, how do you do your tacos with black beans? Are they just tacos with a side of black beans or do you add the beans into the taco?

And let me tell you, I am in SERIOUS need of some salmon. I can't stop thinking about it. I hate that the best variety is out of season now...but I'll come up with a different one because I *need* some salmon!

Okay I have

Monday - the Pork Loin w/ apples and cabbage (and red potatoes for picky DH)

Tuesday - If Hannah is well, it is soccer night and we hit up Chick FIL A...

Wednesday - Beef Stew and Rolls

Thursday - Ally's meat loaf and some baked zucchini and squash and probably some Rotini for the kids

Friday - Good old spaghetti

Saturday and Sunday...probably a Dream dinners meal and steak and potatoes (DH favorite )

degrees here, so we need one last summer meal off the grill)

I haven't cooked in nearly 2 weeks, very rare for me.

Tonight, I am working late and DH and RS are on their own. Tomorrow, I am making veg soup. The rest of the week, I am stealing all of your ideas!!!
