I think my family is getting mush. That is how I feel. This big fat grocery list that I have to go out this morning and fulfill and then prepare food...UGH. I kind of like the week of take out and fast food that we had last week!

Ok, you all are inspiring me to actually try to plan my meals in advance. So, here it goes:

Monday - stir-fry veggies with steamed rice

Tuesday - Spaghetti squash with homemade sauce and meatballs (I got this from Martha)

Wednesday - BBQ ribs, baked beans and potato salad (it's going to be warm Wed. so BBQ it is)

Thursday - DH works, thank God I don't have to cook - leftovers

Friday - Pizza night

Su- going to DH's grandparents for a birthday party

We make veggies with everything, but it just depends on what we are in the mood for. And, sometimes we add a homemade bread.

Mine's all changed but breakfast for dinner tonight sounds like a good plan...DH is going to be asleep and I am not making a fancy dinner for just ME but the kids like breakfast food...Eggs and waffles and fruit for dinner!

I love breakfast for dinner. We never do much for the real breakfast time, so we save it for dinner. Plus, I'm always looking for an excuse to make some more coffee!

I just made a Rachael Ray 30 minute meal this week and it was awesome and full of healthy yumminess. Great fall weather food. Hungarian Hot Sausage and Lentil Stoup, if you really want it to be 30 minutes though I would start the broth and lentils in a separate pot, while sauteeing the sausage and veggies. I only had beef broth on hand and I used kale (which is great in soups and so healthy), topped the finished soup with freshly grated parm and had rosemary ciabatta on the side for dipping.
