I hear you, Ally! I only had to do the first half of this week because we're leaving town on Thursday. (Hence why I planned 3 weeks, I wanted to have planned through our trip and a little bit after we get home so I don't have to run to the grocery store if we're too tired upon return).
Today: roast beef, roasted veggies, rolls
Monday: french dips with the leftover roast
Tuesday: chicken puffs, some sorts of fruit/veggies
Wednesday: beef stew, biscuits
Thursday- Sunday: gone!
Monday: lasagne
Tuesday: enchiladas
Wednesday: Halloween...I'm not sure yet, I haven't gotten that far!

Sunday: pulled pork sandwiches w/ fresh carrots and celery
Monday: Herbed Chicken and Veggies
Tuesday: Turkey Stuffing Divan
Wednesday: Onion-Baked Pork Chops + mashed potatoes + veggie
Thursday: Country Beef and Veggies
Friday: Spicy Salsa Mac and Beef
Saturday: whatever leftovers that are leftover or eat out

(We usually take leftovers as lunches.)

Alright ladies ... I have the entire week out in front of me and not a SINGLE dinner planned. Help me out ... what are you having this week?

Tonight: tortilla soup
Tues: pork chops of some sort
Wed: fajitas
Thurs: I'll be gone so either leftovers or mac and cheese for the rest of my fam
Friday: homemade pizza. We have niece and nephew this night, and I think we're going to decorate Christmas cookies too.
Sat: we're having a lunch with friends here, so dinner will probably be leftovers from that or else out
Sun: BIL's birthday- dinner at their house

TUES: pesto chicken over rice
WED: vegetarian chili and cornbread
THURS: roasted carrot soup, turkey salad sandwiches and fruit kabobs
FRI: SIL's SUPRISE 40th party...atlantic city for dinner!
