Alright, so I made my first from-scratch lemon cake! I added 1/2 tsp of lemon extract to the batter, made lemon curd for the filling, and then frosted the whole thing with cool whip. (I ended up having to skip the strawberries, because the ones I got on Fri. had already turned. )

Bonus? My house now smells like a lemon grove from baking the cake and making the curd!

DH doesn't really like "frosting" - I always frost his devil's food cake with Cool Whip! LOL! It's delicious as a frosting.

The cool whip worked really well. It made it super light - perfect for the light, airy summer dessert I was going for! I didn't get it NEARLY as smooth as your cake, but it looked pretty enough that everyone said "oooooooooh" when I lifted the lid of the cake holder. No pic though.

It was VERY yummy, if I do say so myself. It was a big hit at dinner. Even the little kids liked it! I was just lemony enough. The cake was a BIT overdone (darn gas oven ...), but it still tasted great.
