Default STrawberry Cake

Anyone?? I have seen a couple on the internet but I just don't knwo what actually tastes good. Its for REagan's birthday (we are celebrating a month early to actually include my sister and not include her new baby sister). So she wants a pink party (how perfect with all the valentines decorations out there) and her favorite cake is strawberry shortcake, BUT I know she will be dissapointed if she doesnt' actually ahve a cake with candles so if anyone knows a strawberry cake let me know please. The party is Feb 2.

What about a casatta cake? We had this for one event and it's great - vanilla cake with custard and strawberries, but you could easily do it with vanilla pudding instead of making custard. Usually has a whipped cream frosting. Yum!

I asked DH for a strawberry cake for my birthday this past year. Let me ask him where he got the recipe. He is a total food snob and refuses to make a cake from a box mix! I'll get back to you.

BTW, I LOVE red velvet cake...the chocolaty kind, not just with red food coloring. Martha used to have a fantastic recipe for it...

I need to stick with strawberries. She is in LOVE with strawberry shortcake (not the cartoon yet thank goodness b/c I am a purest when it comes to that and the new ones don't cut it for me!) so I need something that is more strawberry than redvelvet cake. But I did see that you can color the white cake with jello powder... to give it a great deep red color and some flavor.

I can't find the *one* DH used...but he was sure to do it without gelatin and with strawberry puree (as using whole strawberries leaves holes in the cake as the water comes out of the strawberries). Here's one you can try...

Whole Foods Market : Recipes : Strawberry Cake

Or

Fresh Strawberry Cake
2-1/4 c sifted cake flour
1/4 tsp salt
2-1/2 tsp baking powder
1/2 c butter
1-1/2 c granulated sugar
2 large eggs
1 tsp vanilla extract
3/4 c fresh crushed unsweetened strawberries.
Sift flour with salt and baking powder. Combine butter, sugar eggs, and vanilla, and beat for 3 minutes, scraping sides of bowl a couple of times. Then add flour mixture alternately with strawberries. Blend into the creamed mixture, then beat for 2 minutes. Turn batter into 2 8-inch round layer pants that have been buttered, lined with parchment, and buttered again. Tap pans to release excess air, bake at 350 for 25-30 minutes. Cook in pans 5 minutes, then turn out onto racks. Remove parchment while layers are still warm. When cool, frost with Uncooked Fruit Whip, using fresh strawberries, or whipped cream and sliced strawberries.
Uncooked Fruit Whip
1 c strawberries
1 c sugar
1 large egg white
Mach the fruit to a pulp, add sugar and egg white, and beat until light and thick. Use immediately.

Basically, make a regular layer cake and put strawberries between the layers along with buttercream icing. I think pairing that with regular white or strawberry cake would be devine.
