Savory Scones | | I wrangled this recipe from the instructor at my cooking class Monday night. Nora and I made them for lunch. Oh my, they are tasty!
I used the recipe builder to calculate the WW points (about 8). It's a bit scary, but I had one scone with a green salad (topped with a zero-pts dressing), and feel completely satisfied.
They are fun for little ones to make since you use your hands to smush the butter! Savory Scones (makes 6 or 7)
8 oz unbleached flour
1/2 oz baking powder
1/8 oz salt
2 oz unsalted butter
1 C heavy whipping cream
2 oz diced ham or proscuitto
2 oz shredded cheese (use your fave...blue, swiss, cheddar)
1/8 tsp garlic powder
1/2 T chopped chives (or your favorite herb)
Preheat oven to 400 degrees and line a baking sheet with parchment.
Mix the first 3 ingredients in a bowl with a fork. Cut the butter into half-inch cubes and mix them into the dry ingredients, using your fingers, until the butter resembles coarse crumbs.
Mix in the cream gently until the mixture resembles biscuit dough (be careful not to over mix as that will make the scones heavy)
Mix in the ham, cheese and flavorings.
Using an ice cream scoop (mine's about 1/3 cup and I got 7 scones), drop scoopfuls onto the parchment lined sheet.
Brush tops of scones with heavy cream.
Bake for 10-15 mins or until golden brown on top. |
