Pretty much the same I use them in my spaghetti sauce (instead of ground beef) and it gives the sauce a very similar look and texture. My dad didn't even realize it wasn't meat sauce!

I just buy the canned ones (cause they are easy and I am lazy.) I can't even remember what kind they are but I think most would work!

Kim, that's funny you say that about the texture - I used to HATE the texture of beans, but I liked lentils, and then slowly ended up liking different kinds of beans - I think I ate lentils first, then refried, then black beans, and then other beans. So, give them a try! You never know.
