Default Lemon type Jam

My neighbour dropped off this concoction that is the consistency of Jam...lemon flavoured, you can take the butter in it ... She dropped it off while I was out today and never told my MIL what it was... It is freakin amazing...

What is it? thoughts? I feel like brewing up some toast But my spoon is working really well

Lemon curd is awesome on scones. It is really easy to make. I think Kim (Sparqi) has a good recipe for lemon curd and shortbread.

I do. Let me hunt it up.
Lemon curd ROCKS on scones, pound cake and on shortbread cookies (even better on shortbread dipped in dark chocolate.

Oooh. It's also good on vanilla ice cream with cookies sprinkled on top.

Can you tell...I love Lemon Curd. I have a Meyer lemon tree, so I try to make some every Winter when the tree is full of lemons.

MMMMM

That's it, the next time I am in town I am picking up a crate! My mom had one at her old house and I LOVED those lemons. I tried to grow one and you'd think in the old citrus capitol of the nation I could grow one but it never made it.
