Default I need a brunch recipe!

My family will be staying with us again this weekend and I need a good overnight (or easy to throw together in am) recipe. Last weekend I did a hashbrown & egg dish. I was thinking a french toast or similar for this weekend. Anything you have that is a hit? I'll be serving 8-10 people. TIA!

Overnight French Toast

5 eggs
3/4 c. milk
1/4 tsp. baking powder
1T. vanilla
1 loaf Texas toast (I used the $1 French bread at my grocery store)
20 oz frozen whole strawberries
4 ripe bananas, sliced
1 c. sugar
1 T. apple pie spice or cinnamon

Combine eggs, milk, baking powder and vanilla. Pour over thick slices of bread in greased 9x13 casserole (I lined up the bread slices in two rows, overlapping the edges, like toppled dominos). Cover and refrigerate overnight. In the morning, combine strawberries, bananas, sugar and spice. Top bread with fruit mixture and bake at 450 degrees for 20-25 minutes.


This is not French Toast, but it's filling with the cream cheese. I've made it many times. You can use any fruit...even cherry or apple pie filling or sauteed apples. I've used blackberries and raspberries, too. It's delish. Just mix the dry ingredients the night before. Mix the rest in the food processor in the morning and bake. OMG. It smells so good when it bakes!
