Crock pot Chicken w/Spinach | | This was adapted from Chris of "Notes from the Trenches". I can't find her recipe (thought I had it bookmarked) so I will just tell you how I make it.
Place 2 frozen chicken breasts in the crockpot. Add 2 cloves minced garlic, a few tablespoons of pesto, a splash of balsamic vinegar. (sorry I'm not more accurate with my measurements) Cook on high for a few hours. Add an entire bag of fresh spinach. Continue cooking until chicken is done. Shred chicken while still in crockpot. Add a jar of your favorite pasta sauce. Sometimes I add a can of mushrooms or chopped fresh ones along with the spinach. Leave in crockpot until sauce is heated through. Or you can take it all out and heat it on the stove. Serve over rice or pasta. It tastes really good for how simple it is. |
