Default Crispy Zucchini Coins

Crispy Zucchini Coins

1/2 c Italian bread crumbs
3 Tbs grated Parmesan cheese
1/4 tsp pepper
3 cups thinly sliced zucchini
2 egg whites, lightly beaten
cooking spray

Preheat oven to 450 degrees. Combine first 3 ingredients; stir well.


Dip zucchini in egg whites; dredge in bread crumbs and place in a single layer on baking sheet coated with cooking spray. ( I spray the tops of the zucchini before I throw them in the oven, too)

Bake at 450 for about 20 min. Flip them after 10. You want them crispy and browned.

They make a great snack, too. mmmmm....

I just saw this recipe in a magazine too. I am going to try it next week. It just sounds so yummy to me...throw some ground flax in the bread crumbs and you'll get that nutty flavor too. mmmmmmm

I like the parmesan twist to it!
Here we just flour the zucchini slices and fry them in olive oil. We eat them accompanied by tzatziki or skordalia sauce.
