Default Bruschetta Chicken Bake

I'm making this tonight. From the reviews it sounds like its a dish for the entire family. I'll be doubling the cheese because we LOVE cheese!

Bruschetta Chicken Bake recipe at Kraftfoods.com

Bruschetta Chicken Bake

1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. dried basil leaves
1 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese

HEAT oven to 400°F. Mix tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.

LAYER chicken, basil, cheese and stuffing in 3-qt. or 13x9-inch baking dish.

BAKE 30 min. or until chicken is cooked through. Enjoy now or cover and refrigerate. To reheat, microwave each serving on HIGH 2 to 3 min.

Its a great quick prep meal. I didn't add more cheese (I was too lazy to open another bag ) but I'll try to remember for next time.

DH and I really liked it, but neither of the girls ate much of it. I'll try a few more times in case they were just being difficult tonight.

DH and I LOVED it! This definitely will get added to our monthly rotation!My kids weren't fired up about it either! Sassy ate the chicken out of it and SM tasted some of the bread. They'll see it again b/c I made a double batch.

I made a few modifications to the recipe: I used tomatoes from our garden instead of canned, tossednthe chicken w/balsamic vinegar and very little salt. Oh and instead of stuffing mix I used some dried out french bread softened w/chicken broth instead of water. I also sprinkled the top w/a bit of Parm about 10 min before it was done cooking. Yummy!!!

I have a question about this (making it tonight)...when it says "layer" the chicken and the stuffing mix and the cheese...did you do just one layer of each or did you use half of the chicken, half of the stuffing and repeat?

Can't wait to see how it turns out!

I just did one layer of each. Chicken, then cheese, then bread/stuffing topping.

You will love it Sara, hope your kids do too!
