Default Breakfast Couscous

I made this today, and was surprised it was so good! I think of couscous as savory.

Breakfast Couscous with Dried-Fruit Compote Recipe

I did make some changes because I wasn't going to have 2 pots on the stove!

I used just raisins for my dried fruit (you'll see why in a minute) and steeped them in a heatproof bowl with the teabag and some boiling water.

I toasted the couscous in a pot with olive oil, then poured the steeping water from the raisins over the couscous (I added more water from the kettle to make up any shortfall). When the couscous was done, I stirred in the raisins, a dollop of applesauce, and sliced banana (you could use any fruit). Then I poured some warm milk on stop and just a sprinkle of brown sugar.

It was easy and delicious!

I have a breakfast couscous recipe that I love - and was surprised because couscous is so not a breakfast food to me. The one I have you soak the dried fruit in orange juice over night. It's delicious! I'll have to try this variation too.
