Best Roast Potatoes

We had these at a dinner party last night and they were sooooo good!

Garlic Roasted Potatoes

3 pounds small red or white potatoes
1/4 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic (6 cloves)
2 tablespoons minced fresh parsley

Preheat the oven to 400 degrees F.

Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.

Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

Thanks, Morgan...my family loves roasted potatoes...I usually just do olive oil, salt and pepper and herbs. This will be a great alternative.

Try swapping out the potatoes for carrots or cubed butternut squash (or probably several other things, these two are my personal favs), or a combination of any or all three. Yum!!!

We make those same potatoes and add fresh rosemary sprigs (whole) to the pan when roasting. YUM. It makes the whole house smell soooo good.

I will throw out there that my MIL makes awesome roast vegetables. She (and now I) always boils them for just a few minutes, then sloshes them around in the pot so they get a little banged up. Season and roast them -- they turn out awesome after that little banging around. It helps ensure they get nice and crunchy on the outside. Mmmm.
