Default Baked Brown Rice

I have never had brown rice come out so good. I used chicken broth instead of water. Delicious!

Baked Brown Rice Recipe courtesy Alton Brown, 2005


1 1/2 cups brown rice, medium or short grain
2 1/2 cups water
1 tablespoon unsalted butter
1 teaspoon kosher saltPreheat the oven to 375 degrees F. Place the rice into an 8-inch square glass baking dish.
Bring the water, butter, and salt just to a boil in a kettle or covered saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour.
After 1 hour, remove cover and fluff the rice with a fork. Serve immediately.

Thanks for sharing. We love brown rice, but it's nice to see a different way to prepare it.

We just finished dinner. It rocks.

One other edit I might make is to cut the butter. I T doesn't seem like much, but the bottom of the pan is full of butter (not always a bad thing, but....)

I'd either use olive oil or cut the butter by at least half.

Really, it tastes divine!

Thanks for posting, Kim! This will be perfect to do while roasting vegetables in the oven (which I love to do all winter). I'll use vegetable broth. FWIW, I have the rice steamer from Pampered Chef and it rocks for making brown rice (white rice, too) in the microwave. Not a drop of boil-over.
